My new favorite summer snack? A banana berry smoothie with spinach. It’s so quick and easy to make (but alas, a caveman could NOT make it because it requires a blender). This all-natural kick-starter is fabulous for many reasons. Not only is it a great source of antioxidants but the spinach ALONE is a rich source of:
Vitamin A, C, E, K, B2 and B6
Omega-3 fatty acids
Basically this snack is a vegetarian’s best friend…or any man’s best friend (and healthier than a salad in my case because I usually drench those in dressing).
Ingredients (makes 3 servings):
1.5 cups of milk
1 whole banana
10-12 frozen strawberries
Two handfuls of frozen blueberries
2-3 cups of spinach (be generous because you can not taste the spinach AT ALL)
5-10 cubes of ice (optional)
Voila! You no longer have to throw your money at Jamba Juice. Throw all these ingredients into a blender and blend the ice in last. Add a couple mints to your glass for extra freshness. Cheers.
